It was about time I made another batch of granola, so using the coconut I just got for a cookie pie and the huge bag of chia seeds, I decided to make my own coconut chia seed granola. Looking at my other granola recipe, I just changed a few things to make this awesome granola.

Lately my favorite breakfast has been greek yogurt, berries, some chia seeds, and granola. It’s one of the only things I eat for breakfast now – that and the occasionally eggwich (egg on bagel). I usually get Nature’s Path Pumpkin Flaxseed or Coconut Chia – but since I’ve been having it so often, I ran out. And I just need granola in the morning – call me crazy but with that, this granola born this granola.
1.5 months until summer. No more homework, a lot less stress, and a lot more time for cooking! Not to mention the awesome availability of produce from the farmer’s market. These vegan summer rolls capture the light, colorful, and fresh aspects of the season. No wonder they are called summer rolls 🙂
