It’s been awhile since I posted. I think that’s because in the past couple of years I became serious about my health and fitness journey. More to come on that later. As I became more and more invested into fitness, I drew away from my blog because I felt like a baking blog with such sugary treats would do my journey no good (somehow I always end up eating the batter). For those that know me, they know that I love to workout. When I don’t have homework (which happens a lot less than I would like), soccer, or am not cooking – I will most likely be lifting. “Of course you were at the gym,” they say. I can’t help it! For me, pushing myself is a way to destress and motivating to see what my body is capable of. But I get hungry. Not hungry, I am starving. All the time. Especially after a game or workout. I feel like nothing can satisfy the never-ending pit I call my stomach. When my stomach starts to grumble, all I can think about is what I am going to eat. Lately my favorite breakfast has been greek yogurt, berries, some chia seeds, and granola. It’s one of the only things I eat for breakfast now – that and the occasionally eggwich (egg on bagel). I usually get Nature’s Path Pumpkin Flaxseed or Coconut Chia – but since I’ve been having it so often, I ran out. And I just need granola in the morning – call me crazy but with that, this granola born this granola.
1.5 months until summer. No more homework, a lot less stress, and a lot more time for cooking! Not to mention the awesome availability of produce from the farmer’s market. These vegan summer rolls capture the light, colorful, and fresh aspects of the season. No wonder they are called summer rolls 🙂
It’s been crazy lately, with soccer picking up speed and exams coming closer. So of course, I made these browned butter pretzel chocolate chip cookies to pass out to my teammates. If you don’t know how to make browned butter, take a look at my tutorial here! This time I added oatmeal, took out an egg yolk, and even guesstimated on flour so the dough would be more moist.
I think I have found my new favorite dessert: CARMELITAS. I made these the other day for my aunt to return the favor of her making us a delicious pan of baklava 🙂 But, what is this wonderful, gooey, mouthwatering bite I speak of? Carmelitas are a layered bar, complete with an oatmeal cookie layer crust, chocolate chips, walnuts, caramel sauce, and another crust to top it off.
